Pinterest Challenge - January 2017

I’m starting this off as a lie. These are all things I did in fall of 2016. But we’ll go with it. As you can tell, I got into some good breakfast routines. For a while, I didn’t work until Thursday evening, so I didn’t have anything to do in the morning. I was really into waffles for a while which is why you see so many here. 1.        Baked Bananas Foster Oatmeal This was one of the best by far. I’ve been meaning to make it again, but it takes a long time, and I just have not had the time. It makes two portions, so I made some for my mom and myself, but you could 100% stick it in the fridge and warm it up the next day. Highly suggest this meal from Culinary Ginger . 2.        Bakery Style Chocolate Chip Muffins Since I work in the mornings, I like grab and go breakfasts. Muffins and some fruit are perfect for that. 16 Things in 2016

I guess it has been a while. I needed some time. I don’t know what it was, but last term was difficult. I know it happens to everyone. This seemed to be an epidemic (which I’m telling you right now is an over-exaggeration). I thought that maybe it had something to do with coming back from a year abroad or “senior-itis.” As it turns out, it wasn’t just me – it was everyone. It didn’t matter what year they were in, or what program they were in, but everyone had a rough time. As I found out near the end of December, one of my professors mentioned that students seemed to be more “on edge” this year. This term is so far so good. I’ve been working out every day (save for a few where I had a nasty cold), and I’m relatively on top of my work. I cut down my hours at the pool so I can manage my time better. I still have a few things to touch up, but I’m feeling better. To start off a new year of blogging, I’m going to do a little reflection on last year. Yes, I’m aware that it is the middle...
