Monthly Favourites - May 2020

Another month in lockdown. I’m nearing the end of my tenth week. I can’t believe how long this has gone on for. There are talks of what is normal and what is not. How are we going to go back to work? Will it ever be the same?

I’ll save those ponderings for another day. This month, I’ve really sunk into routines that revolved around really enjoying what I’m eating. I’ve been trying a lot of new things. I’m still baking, but I’m getting more and more into it. I absolutely love what I’ve been eating, as you can see.

1.      Breakfasts


I have an entire breakfast schedule. I start my day with a big meal and a cup of coffee. It is my favourite way to start the day. Breakfast has always been my favourite meal, but I never have time to eat it when I’m working because I hate early mornings. This is the perfect way to start the day.

2.      Pecan Butter


For anyone who knows me, this is a nut I’m NOT allergic to! I’ve always wanted to make my own nut butter, so I finally bought a mini food processor to make it myself. The experience was easy and delicious. I spread it on banana bread and apples for a little snack. Amazing.

3.      Afternoon Tea


Another one of my rituals is a green tea with the treats I’ve been baking. I’ve made scones for the classic afternoon tea. I’m officially British now. I think this is technically considered a cream tea, but forgive me for that.

4.      Going Home


This is a very raw and real picture of me. It was right after I got off the phone after a conversation with my boss where she told me I could leave for Canada early. I burst into tears and then lost it. Since then, the anxiousness I used to feel dissipated. This is best decision I could have made. Being home is going to be the best thing for me.  

5.      My Friends


I am so thankful for everyone. Not just these two, but everyone. I had a department Zoom call last week, a closer friends Zoom call last night, and countless messages coming through today. I’m so blessed to have so many amazing people in my life. I’ve created an amazing community for myself, and I’m very lucky to be so upset to be leaving. I’ve created some lifelong friendships here that I will cherish forever.

This post went from food joy to me feeling like I have a heavy heart. None of this is easy, but I’m happy to be going back home. I will keep you update on that!

Copycat the Cool Way #2

I admit that I am a little late with this post. Things have been insane school-wise so I haven’t been keeping up to date with all my posts. Or anything for that matter. Plus, I got a new phone and I had to figure out how to get all the pictures from my old phone on to my laptop. Ugh.
